Ingredients:
- 8-10 fresh garden tomatoes, chopped
- 1 onion, chopped
- 4 cloves garlic, minced
- 2 tablespoons olive oil
- 1 cup vegetable broth
- 1 cup heavy cream
- 1/4 cup fresh basil leaves, chopped
- Salt and pepper to taste
Instructions:
Put olive oil in a big pot and heat it over medium-low heat
Add the minced garlic and chopped onion and saut until the onions are fragrant and clear
Set the pot on low heat and add the chopped tomatoes and vegetable broth
Cook for 15 to 20 minutes, until the tomatoes are soft
Blend the soup until it's smooth with an immersion blender
Add heavy cream and chopped basil leaves and mix well
Add pepper and salt to taste
Simmer for another 5 to 10 minutes, or until everything is hot
Serve hot, and if you want, top with more basil leaves
