This simple vegan jam is made with sweet strawberries and sour cranberries, making a delicious spread that goes well on toast, sandwiches, or desserts.
Ingredients:
- 2 cups fresh strawberries, hulled and sliced
- 1 cup fresh cranberries
- 1 cup granulated sugar
- 1 tablespoon lemon juice
- 1 tablespoon chia seeds
Instructions:
In a medium saucepan, combine the strawberries, cranberries, and sugar over medium heat
Bring the mixture to a gentle boil, stirring occasionally
Once boiling, reduce heat to low and let simmer for about 15 minutes, or until the fruit is softened and the mixture thickens
Remove from heat and stir in lemon juice and chia seeds
Let cool for 10 minutes
Transfer the jam to sterilized jars and let cool completely before sealing
Store in the refrigerator for up to two weeks
