Macaron Ice Cream Sandwich



Enjoy the light crunch of macarons with the smoothness of ice cream in this tasty frozen treat.

Ingredients:

  • 6 macarons assorted flavors
  • 1 pint of ice cream your choice of flavor

Instructions:

Allow the ice cream to soften slightly at room temperature for easier spreading

Match macarons of similar sizes and flavors

Place a scoop of ice cream on the flat side of one macaron

Top with another macaron, flat side down, to create a sandwich

Repeat with remaining macarons and ice cream

Optional: Roll the sides of the ice cream in sprinkles, nuts, or chocolate chips for added texture and flavor

Place the sandwiches in the freezer for at least 1 hour to firm up before serving

Cherry Wheat Beer Popsicles



These Cherry Wheat Beer Popsicles are a refreshing adult treat with a perfect balance of sweet cherry flavor and wheat beer goodness. They're ideal for summer gatherings or any occasion when you want a unique and delicious frozen dessert.

Ingredients:

  • 12 oz cherry wheat beer
  • 1 cup cherry juice
  • 1/4 cup honey
  • 1 cup fresh cherries, pitted and halved

Instructions:

Cherry wheat beer, cherry juice, and honey should all be mixed together in a bowl

Stir until all of the honey is gone

Put the cherry halves into separate popsicle molds

Fill the molds almost all the way to the top with the beer mixture

Place popsicle sticks inside the molds

Put it in the freezer for at least six hours, or until it's completely set

Long-term use of warm water on the outside of the molds will help you remove the popsicles

  • 2 cups shredded purple cabbage

In a small bowl, whisk together lemon juice, olive oil, maple syrup, ground flaxseed, salt, and pepper to make the dressing

Pour the dressing over the salad and toss until well combined

Serve immediately or refrigerate for later

  • 1 block firm tofu, pressed and cubed
  • 2 tablespoons cornstarch
  • 1 tablespoon soy sauce
  • 1 tablespoon maple syrup
  • 1 tablespoon rice vinegar
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons vegetable oil

Instructions:

Preheat oven to 400F 200C

In a bowl, combine cornstarch, soy sauce, maple syrup, rice vinegar, garlic powder, paprika, salt, and black pepper

Add cubed tofu to the bowl and toss gently to coat evenly

Line a baking sheet with parchment paper and spread tofu cubes in a single layer

Drizzle vegetable oil over the tofu cubes

Bake for 25-30 minutes, flipping halfway through, until tofu is crispy and golden brown

Chili Dog Casserole Topped with Cheese Fries

Ingredients:

  • 1 lb ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can 15 oz chili
  • 1 can 15 oz diced tomatoes
  • 1 can 15 oz kidney beans, drained and rinsed
  • 1 package 16 oz frozen French fries
  • 1 cup shredded cheddar cheese
  • Salt and pepper to taste

Instructions:

Preheat oven to 375F 190C

In a skillet, cook ground beef, onion, and garlic over medium heat until beef is browned and onion is softened

Stir in chili, diced tomatoes, and kidney beans

Season with salt and pepper to taste

Simmer for 5 minutes

Transfer the beef mixture to a casserole dish

Arrange frozen French fries on top of the beef mixture in an even layer

Bake in the preheated oven for 20-25 minutes or until the fries are golden and crispy

Sprinkle shredded cheddar cheese over the fries and return to the oven until the cheese is melted and bubbly, about 5 minutes

Serve hot, garnished with your favorite toppings such as chopped green onions, sour cream, or jalapeos
